The Source

Went to this kicking cafe in Mosman on the way home from our 5th anniversary stay the city. Met up with Lach (the bro) and Joy (the wife). There's a massive Synesso and a tricked out Mazzer grinder - they cut a hole in the back and whacked on a sizable cooling fan (like a computer) - they said it works a treat. The barista even has a tat of a group handle on his foreram and it seems the rugged unshaven look is the staff uniform. The use a tasty bean from South Melbourne by St Ali. Had a double ristretto latte then a piccolo. Kate had a couple of lattes. Lach had large flat white in what I now call 'Sambo's dream cup' - solid heavy with a dark brown glaze on the outside (you can get them from Cafe Bianchi). Every cup was sweet as! Anyway check it out - it's off Military Rd on Raglan St.

ECM is still at the doctors :( They said it's the control board which they were getting shipped in already and should be here this week. I also asked if they were doing the thermal stability mod (pimping) on old machines - they're yet to get back to me with a price.

I tried a plunger coffee this morning, only half a cup with splash of cold milk - still watery - maybe I could mix up a paste of grounds and a dash of water and eat that ;)

I can't do milk in a plunger coffee - it tastes wrong

Toose, while you struggle with plunger coffee while you machine is getting fixed, spare a thought for the people living in London, where there isn't a single decent coffee shop in the entire city!

coarse grind - grind immediately before adding the water - not too hot, let the kettle cool down before you pour.
you need to leave it a while - probably a few mins - before plunging. Let a crust form on the surface.
But don't take my word for it..

Matt which Doctor is your ECM at? I've been wanting to get mine pimped, but can't really afford to send it to Melbourne for Chris to do it.

I'm also not a major fan of the plunger, but it is the best way to cup a coffee. So maybe think of it as a learning experience, picking up all those subtle nuances that can get lost or muted in an espresso. :)

Thanks for the London suggestion Michelle - I'll make sure MnTT get it.

I've put it in with ECA in Belrose - I haven't heard back from them about the pimping. Not sure if they can do it or how much $. There was a post on Coffeesnobs from DiBartoli saying they'd received their first lot of 'Rocket Giotto's' from ECA.

I'll call ECA today hoping the 'G' is ready for collection - they've had it for over a week.
